In this cooking class you will learn to make a fresh pasta dough, to knead it, roll it out and cut it into fettuccine shape. You will also learn to prepare our Italian classic ragù. Step by step I will give you tips and advice to obtain the best result.

In this lesson you will learn to prepare a creamy dish of spaghetti with tomato and basil sauce, a true classic of our Italian cuisine. This is an extremely simple and tasty dish. Any family has its own recipe, as for any Italian dish. In this class you will also start practising the risottatura technique.

In this class you will learn to prepare creamy spaghetti with clams, another true classic of our cuisine. And you will also learn to clean and select clams and to cook them in a proper way, in order to keep them tender.

Pesto sauce is a delicious recipe that originates from the coastal region of Liguria, where a stunning type of basil is grown. A few ingredients for a flavourful dish. You will learn to prepare pesto in both ways, modern (by using an immersion blender) and old fashioned (by using a mortar).

Risotto is a traditional northern Italian rice dish cooked with broth until it reaches a creamy consistency. It's one of the most famous Italian first courses and it can be prepared with a variety of ingredients. I will show you step by step the method to obtain a delicious, wavy and creamy risotto.

Students will learn how to prepare some of the most famous Italian second courses paired with tasty vegetable side dishes. Important cooking techiniques (caramelization, blanching) will be shown.

It is extremely important to learn how to perfectly seal meat when preparing a meat stew. You will also learn to blanch potatoes when you wish to bake them or to add them to a meat stew. Blanching will allow potatoes to keep whole and firm.

In this cooking class you will learn to prepare a flavoured salt crust to bake fish (it can also be used for meat preparations). We will then prepare together a fresh salad with greens and orange to be served alongside grilled or baked fish and meat for a tasty pairing.

This is another true classic of our cuisine, particularly appreciated by children. In this lesson you will also learn to prepare 2 tasty flavorful vegetable side dishes.

In this lesson you will learn to prepare a gorgeous filling for the calamari. And I will teach you to prepare also a flavorful vegetable side dish, that could also be used as the tasty filling of a famous stuffed pizza from Naples.
