Esta propuesta se focaliza en generar conciencia acerca de la necesidad de romper esta asociación, o sea, de satisfacer las futuras demandas de productos agrícolas reduciendo a la vez el impacto ambiental.

Se presenta una estimación de la futura demanda de productos agrícolas examinando el posible impacto que sobre dicha variable tienen la moderación de las dietas y la reducción de las pérdidas y desperdicios de alimentos.

Entre las estrategias para satisfacer las futuras demandas se enfatizan aquellas que resultan en incrementos de rendimiento por unidad de superficie y de tiempo utilizando las tecnologías que tienden a mayor productividad de los recursos e insumos disponibles y menor impacto ambiental.

Se destacan ciertas tecnologías duras, pero, sobre todo, tecnologías de procesos basados en el conocimiento del funcionamiento de los cultivos, del ambiente, de la biología de plagas, y de las complejas interacciones entre los componentes del sistema de producción.

En aspectos sociales se reflexiona acerca de la pobreza como causa de la inseguridad alimentaria.

Finalmente se indaga sobre la capacidad de innovación y de colaboración de nuestra especie y sobre las posibilidades de dirigir estas potencialidades a solucionar los problemas de alimentación, ambiente y pobreza que hoy enfrenta la humanidad.

Este curso cuenta con 4 unidades enfocadas a la demanda global de alimentos, el contexto general vinculado a la misma y las alternativas productivas deseables, la respuesta global (paradigmática) a las demandas de la sociedad respecto a la forma de producción de los alimentos y un modelo de las garantías que se pueden dar desde el origen de la producción de alimentos.
